Raw Food
Babette wants to open up the world of cooking without cookers, also known as raw cuisine,
raw food or living foods. People who follow this diet do not use heat sources to prepare their
food, as they claim that this is the best way of preserving its properties. As a result,
the raw cuisine movement employs immense culinary creativity that is fascinating to explore.
In addition, the benefits of the increase of raw organic foods in the diet is quickly apparent,
and indirectly you will reduce consumption of processed foods. With raw cooking there is much
use of kitchen robots to create colourful combinations and dishes. In Babette, we emphasise
the use of dehydrators and magnificent juice-makers of triturating action.
The world of vegetarian dips and patés (vegan)

The aim of this course is to convey the basic knowledge required to
produce a simple vegetarian dip or paté that you will be able to keep in the fridge
during the week and which will provide you with a delicious, fast and energetic meal.
It is ideal for those with little time and who are concerned about the quality of their diet.

These dips or patés may be spread on bread to make tasty toasties,
or use as fillings for sandwiches or pitta bread to be taken to work or on an outing. You can
also spread them on lettuce and cabbage leaves, or Nori sheets to prepare homemade Sushi.
These nutritious and delicious patés are easily digested and constitute an interesting culinary
alternative to cheeses and non-vegetarian patés for people allergic to milk or for those
who wish to reduce their consumption of milk products. At Babette you can experiment with
ingredients and learn to combine then, making your own unique creations at home.
Students will be given the handbook ‘The world of vegetarian patés
and cheeses’, a Babette bag and an aperitif with a glass of wine at the end of the class. You will be able
to take away the patés and dips that you make in class. You will also have the opportunity
to buy material and ingredients necessary for you to carry out your first creations at home.
We always endeavour to use organic produce.
You will need to bring several plastic containers or jars with lids to take your patés homes. We recommend you
wear comfortable shoes. A maximum of 8 people per class.

1001 soups (vegan)

In this course you will learn creative ways of making soups using raw
ingredients that are liquidized, blended or mixed in a few minutes. The result is a delicious,
nutritious and energetic soup. These soups can easily be transformed into winter dishes by warming
them up.

and make it very easy to prepare a meal for guests. Also, once you have learnt how to combine
flavours and textures, you can make an infinite variety. The concept itself is
not new – we have an everyday example of these raw soups in Spain: gazpacho. But in this workshop,
we take this concept to a higher level.

Sweet Nibbles ( vegans and celiacs)

Biscuits and energy bars are perfect for snacking between meals or
when you feel like nibbling on something sweet. By making them at home, we can avoid processed
ingredients with limited value and make something that is both
nutritious and exciting for the palate.

In this workshop you will learn to combine fruits, seeds and nuts
with spices, oils and other natural products in order to create an interesting variety of
snacks witha range of flavours and textures. There is nothing better and healthier to take to
work, on a day trip or to school! In fact, as is the case with Babette's ice creams and soups,
these biscuits and bars are very easy to make and therefore great for children to get involved
in the kitchen and awaken their interest in cooking. Some of these sweet nibbles require minimal preparation
- some mixing and chilling - while the rest need little more than blending and dehydrating.
Students will be given the handbook ‘Sweet Nibbles’, a Babette bag and an aperitif with a
glass of wine at the end of the class. You will be able to take away the 'dough' that you make in
class to dehydrate at home in a dehydrator or the oven. You will also have the opportunity to
buy material and ingredients necessary for you
to carry out your first creations. We always endeavour to use organic produce.
